Baicoli are typical biscuits. They have been called Baicoli because their shape resembles that of sea bass, which in local dialect is called baicoli.
They were created as a ship’s biscuit, for long sea voyages by Venetian ships. They are very dry, so they can maintain for a long time.
Their preparation, which is long and laborious, has two acts of leavening and double baking.
