Polenta is a famous dish of cornmeal.
It accompanies main courses, in particular stewed and roasted dishes.
There are many versions, but the most tasty and famous is the polenta infasola, prepared with cereal flour. It is usually eaten with mushrooms and cheese.
It can be yellow or white and it may be served as a hot porridge, or it may be allowed to cool and solidify into a loaf that can be baked, fried, or grilled.
