Sopressa Vicentina

Sopressa Vicentina is a sort of large salami with a diameter of about 8 cm, produced with pork (generally shoulder, ham, capocollo, but also other parts of the pig) and salt, pepper and saltpeter, free of preservatives.

It is also characterized by the D.O.P. mark.

The soppressa is characterized by a good balance between lean and fatty parts, by a soft dough thanks to the hot grinding of the meat with a rather large grain, between 6 and 7 mm, and by a short aging.
